Vinification: Grapes were 100% destemmed and naturally fermented. Punched down once a day during fermentation. Tannat has naturally strong tannins. By handling grapes gently and minimally, we ensure soft, rounded tannin expression with focus on the marvellous fruit. After fermentation, grapes are pressed lightly and put in French oak the next day. Aged for 10 months in older oak ensures that the fruit stays intact and tannins aren’t dried out. Minimal SO2 was added before bottling in November 2020.

Tasting notes: Luscious black berry aromas followed by dried tobacco notes. Tannins well balanced, soft and round with red and black fruit on the palate. Fresh wine supported by tannins that will pair perfectly with a venison fillet.
