Winemaker’s notes: One of my favourite Tolbos vintages to date! Dark black fruits on the nose with a liquorice finish. The palate is concentrated with black fruits followed by dried tobacco notes. Tannins are well balanced, soft and well rounded. Pair this beauty with a well-aged hard cheese to complete a dinner party at the end of the night.

Vinification: Grapes were 100% destemmed and naturally fermented. Punched down once a day during fermentation. Tannat has naturally strong tannins. By handling grapes gently and minimally, we ensure soft, rounded tannin expression with focus on the marvellous fruit. After fermentation, grapes are pressed lightly and put in French oak the next day. Ageing for 10 months in older oak ensures that the fruit stays intact and tannins aren’t dried out. Minimal SO2 was added before bottling in November 2021.
